Quick and Easy Brownies





INGREDIENTS


2 cups white sugar


1 cup butter


1/2 cup cocoa powder


1 teaspoon vanilla extract


4 eggs


1 1/2 cups all-purpose flour


1/2 teaspoon baking powder


1/2 teaspoon salt


1/2 cup walnut halves





DIRECTIONS


Melt the butter or margarine and mix all ingredients in the order given.


Bake at 350 degrees F for 20 to 30 minutes in a 9 x 13 inch greased pan.

Butterscotch Brownies


Makes 12





1 lb white chocolate chips


6 tbsp unsalted butter


3 eggs


3/4 cup of light brown sugar


1 1/2 cups of self-rising flour


1 1/2 cups of chopped walnuts


1 tsp vanilla extract





Preheat the oven to 375F/ 190C. Line a shallow tin with baking parchment. Lightly grease the sides. Melt 3 1/2 oz Of chocolate chips with the butter in a bowl set over a pan f hot water. Leave to cool slightly.


Put the eggs and light brown sugar into a bowl and whisk well. Then mix in the melted chocolate mixture. Sift in the flour into the bowl and fold in along with chopped walnuts, vanilla extract, and the remaining chips. Don't over-mix. Spread the mixture out in the tin. Bake for 30 minutes.








Chocolate Brownies


Makes 20





5 oz plain chocolate, chopped


1/2 cup of sunflower oil


2 eggs


1 cup self-rising flour


1/2cup of sugar


1 tsp of vanilla extract


1/4 cup halved pecan nuts (optional)





Preheat oven to 200C/400F. Grease pan with small amount of oil. Then line with oiled waxed paper. Melt the chocolate with the remaining oil in a bowl over a pan of simmering water. Beat the eggs lightly and add them to the melted chocolate. Beat in flour, sugar, and vanilla. Pour the mixture in the tin. Put on pecans. Bake for 10-15 minutes.

Ingredients


375g best quality dark chocolate


375g unsalted butter at room temperature at least


1 tablespoon real vanilla extract


6 eggs


350g sugar


1 teaspoon salt


225g plain flour


250g white chocolate buttons, preferably Montgomery Moore, or just chop same amount of good white chocolate


tin measuring approx 33cm x 23cm x 5.5cm





1.Preheat the oven to 180C/Gas 4/350F.





2.Line your brownie pan base and sides.





3.Melt the butter and dark chocolate together in a large heavy based pan.





4.In a bowl or wide mouthed large measuring jug, beat the eggs with the sugar and vanilla.





5.Measure the flour into another bowl and add the salt.





6.When the chocolate mixture has melted let it cool a bit before beating in the eggs and sugar, and then the flour.





7.Finally fold in the white chocolate buttons. Beat to combine smoothly and then scrape out of the saucepan into the lined pan. Bake for about 25 mins.





8.The brownies are ready, when the top is dried to a paler brown speckle, but the middle is dark and dense and gooey still; remember that they will continue to cook as they cool.

12 ounces best-quality bittersweet chocolate


6 eggs


1 3/4 cups superfine sugar


1 tablespoon pure vanilla extract


1 1/2 cups plus 2 tablespoons all-purpose flour


1 teaspoon salt


1/2 cup white chocolate buttons, chips, or morsels


1/2 cup semisweet chocolate buttons, chips or morsels


Approximately 2 teaspoons confectioners' sugar, for garnish





Special equipment: Baking tin (approximately 11 1/4 inches by 9 inches by 2 inches), sides and base lined with baking parchment.








Preheat the oven to 350 degrees F.


Melt the butter and dark chocolate together in a large heavy based pan over a low heat.


In a bowl or large measuring jug, beat the eggs together with the superfine sugar and vanilla extract.





Allow the chocolate mixture to cool a little, then add the egg and sugar mixture and beat well. Fold in the flour and salt. Then stir in the white chocolate buttons or chips, and the semisweet chocolate buttons or chips. Beat to combine then scrape and pour the brownie mixture into the prepared tin.





Bake for about 25 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown speckle, while the middle remains dark, dense and gooey. Even with such a big batch you do need to keep checking on it: the difference between gooey brownies and dry ones is only a few minutes. Remember, too, that they will continue to cook as they cool.





To serve, cut into squares while still warm and pile up on a large plate, sprinkling with confectioners' sugar pushed with a teaspoon through a small sieve.

    PREPARATION:


    Preheat oven to 350 degrees. Grease 9x13'; pan. Melt unsweetened chocolate and butter together in a heavy saucepan over medium low heat, stirring frequently. Remove from heat and beat in the sugar and eggs until smooth.





    Add flour, baking powder and salt and stir just until combined. Then stir in chips and nuts. Spread in prepared pan.

    1/2 cup all-purpose flour


    1/2 cup packed brown sugar

    1 3-ounce package cream cheese, softened


    1 egg yolk


    1 cup granulated sugar


    10 miniature chocolate-coated caramel-topped nougat bars with peanuts, chopped


    1/4 cup butter, melted


    1 ounce unsweetened chocolate, melted and cooled


    1/2 teaspoon vanilla


    1 egg


    2/3 cup all-purpose flour


    1/4 teaspoon baking powder


    1/4 teaspoon salt


    1/4 cup milk


    1 cup purchased chocolate fudge frosting





    Directions


    1. Preheat oven to 325 degrees F. Grease the bottom of a 2-quart rectangular baking dish; set aside. In a medium bowl, combine oats, the 1/2 cup flour, the brown sugar, baking soda, and 1/4 teaspoon salt. Stir in the 6 tablespoons melted butter. Pat into prepared baking dish. Bake for 10 minutes.





    2. Meanwhile, for cheesecake layer: In a small bowl, stir together cream cheese, egg yolk, and 1/4 cup of the granulated sugar; spoon in small dollops over the partially baked layer. Sprinkle with chopped nougat bars.





    3. In a large bowl, combine the remaining 3/4 cup granulated sugar, the 1/4 cup melted butter, melted chocolate, and vanilla. Beat in egg. In a small bowl, stir together the 2/3 cup flour, the baking powder, and 1/4 teaspoon salt. Alternately add flour mixture and milk to chocolate mixture, beating with a wooden spoon after each addition just until combined. Carefully spoon over cheesecake layer. Bake for 30 to 35 minutes or until top springs back when lightly touched.





    4. Cool in pan on a wire rack. Spread with chocolate fudge frosting. Cut into bars.





    Makes: 32 bars





    To Bake Ahead: Bake as directed; do not cut into bars. Cover pan; chill for up to 2 days.





    Test Kitchen Tip: For a satiny finish, spread the fudge frosting on with a warm metal spatula.

    1/2 tsp. vanilla


    1-1/2 cups all-purpose flour


    1/2 cup chopped pecans


    1/2 cup tiny marshmallows


    Caramel-flavored ice cream topping (optional)





    Directions


    1. Preheat oven to 350F. Grease a 13x9x2-inch baking pan; set aside. In a small saucepan melt 1/3 cup butter; stir in 2/3 cup brown sugar, the coconut, and 3/4 cup pecans. Pat evenly in prepared pan; set aside.





    2. In a large mixing bowl beat 1/2 cup butter with an electric mixer on medium to high speed for 30 seconds. Add 1 cup brown sugar, the baking soda, and salt; beat until combined. Beat in eggs and vanilla until combined. Add flour and beat until combined. Stir in 1/2 cup pecans and marshmallows. Spoon small mounds of mixture over coconut mixture in pan. Carefully spread to cover.





    3. Bake about 20 minutes (mixture should be evenly browned; center may jiggle slightly when shaken). Cool in pan on wire rack. To serve, cut into bars. Drizzle with caramel topping. Makes 24 bars.





    Raspberry-Crowned Orange Brownies


    Prep: 25 min.


    Bake: 30 min.


    Cool: 30 min.


    Stand: 30 min.





    Ingredients


    1/2 cup butter


    2 ounces unsweetened chocolate, cut up


    2 eggs


    3/4 cup sugar


    1/3 cup orange marmalade


    2 teaspoons orange liqueur, such as Grand Marnier


    3/4 cup all-purpose flour


    1/2 teaspoon baking powder


    Shiny Chocolate Glaze


    2 ounces bittersweet or semisweet chocolate, cut up


    1 teaspoon shortening


    1 pint fresh raspberries


    Unsweetened cocoa powder (optional)





    Directions


    1. Preheat oven to 350 degrees F. Line an 8-inch square baking pan with foil. Grease foil; set aside.





    2. In a medium saucepan, melt butter and the unsweetened chocolate over low heat, stirring occasionally. Remove from heat. Cool about 5 minutes. Stir in eggs, sugar, orange marmalade, and orange liqueur. Stir in flour and baking powder. Spread batter into the prepared pan.





    3. Bake for 30 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 30 minutes. Using the edges of the foil, lift brownies from the pan. Carefully remove the foil.





    4. Pour Shiny Chocolate Glaze over brownies, spreading evenly. Let stand for 5 minutes. Cut brownies into 24 rectangles using a long, sharp knife.





    5. Before serving, in a heavy small saucepan, melt the bittersweet chocolate and shortening over low heat, stirring constantly. Cool slightly. Place chocolate mixture in a heavy resealable plastic bag; snip a small corner from the bag. Drizzle chocolate mixture in a zigzag pattern over each brownie. Top with raspberries. If desired, sift cocoa powder over top. Let stand about 30 minutes or until chocolate sets.





    6. Shiny Chocolate Glaze: In a small saucepan, melt 2 ounces bittersweet or semisweet chocolate, cut up, and 2 tablespoons butter or margarine over low heat, stirring occasionally. Remove from heat. Stir in 3/4 cup sifted powdered sugar, 4 teaspoons hot water, and 1 teaspoon finely shredded orange peel until combined.





    7. Makes: 24 brownies





    8. Make-Ahead Tip: Place glazed brownies in an airtight container and chill for up to 3 days. For longer storage, place unglazed brownies in an airtight container and freeze for up to 3 months. Thaw in container at room temperature for 1 hour before glazing.

    1/2 cup margarine or butter


    1 tsp Vanilla


    2 eggs


    2/3 cup all purpose flour

    These are easy AND amazing...... every one will ask for the recipe...GUARENTEED!!!! Just in case you need to convert the measurements, they are standard Australian Metric units....... I hope you enjoy them as much as we do!! I often double the mix and cook it in a large roasting tray ( cook it for about 80 minutes though!!)





    250g butter


    2/3 cup plain flour


    375g dark (cooking) chocolate


    1 table spoon vanilla essence


    4 eggs, lightly beaten


    2 cups brown sugar


    Ice-cream to serve





    1. Preheat oven to 160’C. Line a 20cm-deep square cake tin with baking paper. Put butter and half the chocolate in a pan. Stir over a low heat until chocolate has melted and mixture is smooth. Remove from the heat and stand for 5 minutes.





    2. Put eggs, sugar and vanilla in a small bowl, then beat with an electric mixer until mixture is thick and creamy. Sift flour into a large bowl, add chocolate and egg mixtures. Mix gently until just combined. Lay the other half of the chocolate in the bottom of the baking pan. Pour mixture evenly over the top.





    3. Bake for 50-60 minutes. Mixture will crack on top and be soft to touch. Stand on a wire rack until cold, then cut into squares. Serve with a scoop of ice-cream.

    There are lots of different brownie recipes, but they are all prepared similarly in brownie style: melted butter and chocolate, beaten eggs and sugar, a little flour. They are very quick and easy to whip together. The trick is not to overcook them - the resulting brownie should be moist, dense and chewy.





    I've started with basic brownies here, along with lots of variations for different additions. Brownies are rich enough to go un-iced, some here have butter icings (which you can eliminate if desired). These brownies are great for snacks and lunches.     Preheat oven at 350 degrees. Break up the chocolate and put the chocolate and butter in microwave and cook on high (100%) power one minute, then for 30 seconds at a time, stirring each time, until both are melted. Remove from microwave and add all other ingredients, mixing thoroughly. Spray non-stick cooking spray in an 8-inch square pan (bottom and sides), and pour the brownie mixture into it.


    Bake for 30 minutes, let cool and cut into squares.

    Peanut Butter Brownies





    In a large mixing bowl combine


    2 cups peanut butter


    1 1/3 cup margarine


    2 2/3 cups sugar


    2 cups brown sugar


    8 eggs





    Stir in 1 Tbsp. Vanilla extract or Almond extract and add


    4 cups all purpose flour


    4 tsp. baking powder


    1 tsp. salt


    Spread evenly on a full size cookie sheet and bake at 350 for 45 minutes. Cool and coat with peanut butter icing.

    If you want any baked goods chewy instead of 'cakey and light' just add a bit more sugar, especially brown sugar, or some honey. Do NOT whip the dough up too much.


    Don't forget the salt either, it tends to keep cooked ''dough'; moist.

    Notting Hill Brownies





    2 cups unsalted butter, melted and cooled


    2 cups granulated sugar


    1 1/2 cups packed brown sugar


    1 1/2 teaspoons vanilla extract


    6 eggs


    1 1/3 cups unsweetened cocoa powder


    2 cups all purpose flour


    3/8 teaspoon baking soda


    1/2 teaspoon salt


    2 cups chopped walnuts or pecans (optional)


    Powdered sugar for dusting (optional)





    Preheat the oven to 350. Spray a 9x13 inch baking pan lightly with non stick cooking spray Line the bottom with parchment paper. Line a baking sheet with parchment paper. Set aside.





    In the bowl of an electric mixer fitted with the paddle attachment, combine the melted butter, granulated and brown sugars, vanilla, and eggs. Beat well on the lowest speed. In a medium bowl, hand whisk the cocoa, flour, baking soda, and salt together. Fold into the batter and blend well with the mixer, stopping once or twice to scrape the bottom of the bowl. Fold in the nuts. Pour into the prepare pan. Smooth the top with a wet knife or metal spatula.





    Place the pan onto the prepared baking sheet and bake for 35 to 45 minutes, or until set and slightly firm, but not dry. Let cool completely on a wire rack, then freeze for 1 hour. Unmold and peel off the parchment paper. Cut into squares, roughly 2 1/2x2 1/2 inches. Wrap each in waxed paper and keep frozen or refrigerated. To serve for a party, piles the brownies onto a platter and dust with powdered sugar.





    Variation: Skip the powdered sugar and drizzle the brownies with melted chocolate.Brownie recipes?
    There is a simple solution for this.


    When you take your brownies out of the oven, let them sit for approx. 10 minutes. Then cover them with plastic wrap. This keeps them soft and moist. Continue to keep them covered even after cutting.

    1 pound plus 3 cups semi sweet chocolate chips


    6 ounces unsweetened chocolate


    6 large eggs

    In a double boiler, melt the butter, 1 pound of the chocolate chips, and the unsweetened

    chocolate mixture. Set aside





    Sift together the flour, baking powder, cocoa powder, and salt. Mix into the batter.

    3/4 cup Hershey's cocoa powder - or any unsweetened cocoa powder.


    1/4 teaspoon salt


    6 tablespoons butter (its best to leave this out of the fridge for a while to make it easy to use)


    8 ounces dark bittersweet chocolate,


    3/4 cup chocolate chips (any variety - you could add nuts as well here)


    4 large eggs


    1 cup sugar (if you have confectionary sugar, this works better)


    1-1/4 cups Guinness


    1 cup semi-sweet chocolate chips

















    Cooking instructions


    Heat the oven to 375 degrees F.


    Find a 9 x 13 non stick baking pan (or line it with foil, or spread some butter over surface to stop brownies from sticking).


    Mix flour, cocoa powder and salt together in a bowl.


    Melt butter, bittersweet chocolate and chocolate chips together - I use a bowl over a pan of bowling water - you probably need to keep stirring.


    Beat eggs until fluffy and add melted chocolate - continue to beat until well mixed (I used the mixer on a medium to high setting).


    Mix in the flour mixture, and the Guinness - drop the semi-sweet chocolate chips evenly on top. (Don't worry if the batter seems thin).


    Bake for about 25 to 30 minutes in the center of the oven - I test to see if they are cooked by putting a knife, or fork into the center - if it comes out clean then the brownies are done.

    4 eggs

    1 tablespoon vanilla


    1/4 cup hot water


    4 eggs


    1 cup semi-sweet chocolate chips (second amount)


    1 cup white chocolate chips





    Directions:


    Melt butter and 2 cups chocolate chips together.








    In a small bowl mix flour and baking soda together.








    Put melted chocolate mixture in a large bowl. Add sugar and beat for about 5 minutes until smooth. With mixer on add vanilla, and gradually add water. Add eggs one at a time and beat after each addition.








    With mixer on low add flour mixture until blended. Fold in remaining 1 cup semi-sweet chocolate chips and white chocolate chips.








    Pour into a greased 9 x 13 inch pan. Bake at 325 degrees F. for 35 to 45 minutes. Cool. Cut into squares. Store in refrigerator.











    Triple Chocolate Brownies


    Ingredients:

    1/3 cup butter


    3 squares unsweetened chocolate

    Icing:

    Icing:


    1/4 cup butter, softened


    2 cups icing (confectioners) sugar


    2 tablespoons coffee liqueur


    cinnamon











    Directions:

    Melt butter and chocolate together. Add coffee powder. Stir in sugar, eggs, vanilla, and salt, mix well.








    Add flour and stir to combine. Stir in chocolate chips and nuts.

    Icing:

    Combine sugar, cream and vanilla in a small saucepan. Stir to blend. Place over medium high heat and bring to a boil. Reduce heat and simmer for 5 minutes without stirring.








    Remove from heat and add chocolate and butter. Stir until chocolate has melted and mixture is slightly cooled and thick enough to spread.








    Pour over cooled cake. Chill and cut into squares. Store in refrigerator.

    Decadent Brownies





    1 pound unsalted butter


    1 pound plus 12 ounces semisweet chocolate chips, divided


    6 ounces unsweetened chocolate


    6 extra-large eggs


    1 tablespoon instant coffee powder


    2 tablespoons real vanilla extract


    2¼ cups sugar


    1¼ cups flour, divided- 1 cup for batter, ¼ cup in walnuts


    1 tablespoon baking powder


    1 teaspoon kosher salt


    3 cups diced walnut pieces (pecans ok, too)





    Preheat oven to 350º F. Grease and flour a 13x18x1½” sheet pan. Melt together the butter, 1 pound chocolate chips, and bitter chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.





    Stir together 1 cup of the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts with 1/4 cup flour to coat. Then add to the chocolate batter. Pour into prepared pan.





    Bake for about 30 min, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.

    2 sticks butter


    3 oz. unsweetened chocolate


    4 large eggs


    ½ tsp. salt


    1 tsp. vanilla


    2 cups sugar


    1 cup A/P flour


    1 cup chocolate chips (optional)


    1 cup chopped nuts (optional)





    Preheat oven to 350ºF. Position rack in center of oven. Grease a 9x13” pan and set aside.





    In a medium saucepan, melt butter. Then add chocolate and whisk. If chocolate does not melt completely, place back over low heat for a minute and continue whisking until butter and chocolate is smooth.





    In a large bowl whisk eggs, salt, and vanilla together. Gradually sprinkle in sugar and whisk until blended. Gradually stream in chocolate into eggs, whisking constantly. Switch to a rubber spatula, and fold in flour.. Fold in chocolate chips and nuts, if desired.





    Spread into pan, bake for 30-35 minutes. For neatest cutting, cool completely. Slide spatula underneath, and transfer entire brownie to a cutting board and cut into 2” squares w/ chef’s knife. Makes 24 brownies.

    2 eggs


    1 tsp. vanilla


    2/3 cup all-purpose flour


    ¼ tsp. baking soda

    1 cup dark chocolate pieces


    ½ cup chopped nuts (optional)


    1 recipe Chocolate Drizzle (optional)**





    1. Preheat oven to 350ºF. Coarsely chop unsweetened chocolate. In saucepan melt butter and chocolate over low heat, stirring occasionally. Remove from heat; cool.





    2. Line 8x8x2'; baking pan with foil. Spray with nonstick cooking spray; set aside. Stir sugar into melted chocolate mixture until sugar is dissolved. Add eggs, one at a time, beating with wooden spoon just until combined. Stir in vanilla.





    3. In bowl stir together flour and baking soda. Add stir-ins. Add flour mixture to chocolate mixture; stir just until combined. Stir in dark chocolate pieces and nuts. Spread batter in prepared pan.





    4. Bake 35 minutes or until edges are set and begin to pull away from sides of pan. Cool in pan on wire rack. Spoon chocolate Drizzle across top. Cut into bars. Makes 16 brownies.





    5. *Sweet stir-ins: Add ½ cup dried fruit soaked in sparkling wine for 30 minutes, drained, and chopped; or 3/4 cup candy-coated peanut butter pieces to batter.





    Spice stir-ins: Add 1 tsp. ground cinnamon or ground ancho chili powder; 2 tsp. orange peel; or 1 Tbsp. expresso powder to flour mixture.





    6. **Chocolate Drizzle: In bowl stir together ½ cup softened powder sugar, 1 Tbsp. unsweetened cocoa powder, ¼ tsp. vanilla, and 1½ tsp. milk. Stir in additional milk, 1 tsp. at a time, until icing is drizzling consistency.

    (This is like kind of brownies but much better)





    You need:


    - 1 can of Condensated milk


    -4 full spoonsChocolate powder


    -2 full spoons of butter





    First you have to open the can and add the chocolate powder to it. Stir it for a few minutes till the milk is brown, then add the 2 spoons of butter to it and mix them.


    After having this you have to put it in either a microwave container (For the microwave you have to heat it up like 4 minutes) or a pan for the stove (Heat this mix for 10 minutes, stir constantly).


    After that is finished wait a little till the chocolates gets colder (You can put them in the refrigerator.) and then you can give it any shape.


    Add whatever else you want and they are ready!
