My friend is allergic to eggs and I need to find something to substitute.In a cake/brownie recipe, what can I use instead of an egg?

INGREDIENTS:


3 cups all-purpose flour


2 cups white sugar


1/2 cup unsweetened cocoa powder

1/2 cup vegetable oil


2 tablespoons distilled white vinegar


1 1/2 teaspoons vanilla extract


2 cups water





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.


In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.


Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.In a cake/brownie recipe, what can I use instead of an egg?
I use mayonnaise, but that has eggs in it, too I think. Try applesauce.
My vegan friend uses vegetable oil instead of eggs. Sometimes what she's baking doesn't rise completely, or just looks a little weird. It generally tastes the same though. Hope that helps!

try egg beaters.....just measure out what you will need.
It sounds goofy, but you can use applesauce instead. It won't be quite the same, but the applesauce blends the ingredients together, as an egg does, and remains moist.
Go to Allrecipes.com click on advice in the top right corner and on the new page - near the middle you will see Common Substitutions click on that and it will tell you all kinds of substitutions for baking including eggs but a word of caution I tried it in a cake I was baking and it did end up with funny texture.
