    What do you mean by ';real chocolate?'; If you melt unsweetened, baking chocolate, if you wish you can reduce the fat (butter or shortening) a tablespoon or so in the recipe. If you are using sweetened baking or candy bar chocolate, reduce the amount of sugar slightly. Cocoa is unsweetened chocolate without any fat added to it.
    Yes you could. The only problem is it might not have the same consistency, and regular chocolate is often sweeter then cocoa powder.     Look at subs in your cookbook or on line. I would go to the store or borrow from a neighbor for the cocoa you need or make something that you have the proper ingredients for.
    trust me it doesnt work. i LOVE baking but i use substitues 2 much and i wind up throwing it away so take a trip to the store,or see if a neighbor has it :) hope i helped

    8- 1 ounce squares of unsweetened chocolate


    1 cup butter


    5 eggs


    3 cups sugar


    1 tablespoon vanilla


    1-1/2 cups flour


    1 teaspoon salt


    2-1/2 cups chopped pecans or walnuts, toasted


    PREPARATION:


    Preheat oven to 375 degrees F. Grease a 9 x 13 pan.


    Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed.





    Stir in the nuts. Pour into prepared pan.


    Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.

    Brownie Layer:

    Pre-heat oven to 350 degrees F. Adjust rack to bottom 1/3 of oven.





    Line a 9 x 9-inch pan with a square of aluminum foil. Using 1 tablespoon of butter, grease the pan.





    Brownie Layer:





    In a heavy saucepan over medium heat, melt chocolate and butter, stirring occasionally. Whisk in sugar and vanilla. Remove pan from heat and beat in eggs one at at a time. Add flour and stir well, then add chopped nuts.





    Turn batter into pan and level with the back of a spoon.





    Chocolate Cheesecake Layer:





    In a small bowl, beat cream cheese until soft. Add sugar, cocoa powder and vanilla. Add flour and eggs, one at a time, beating well after each addition.





    Pour cheesecake batter over brownie layer. Smooth top. Marbelize the batter by inserting a knife almost to the bottom of one corner of the pan and cutting through the batter in an S pattern.





    Bake for 40 minutes, or until a toothpick comes out clean.





    Refrigerate until firm.





    To remove and cut brownies.





    Cover top of pan with a sheet of wax paper, then a cookie sheet. Invert onto cookie sheet and peel away foil that was underneath. Invert again right side up. The cheesecake layer will now be on top. Cut into 32 bars or triangles, cleaning blade after each cut.





    Serve cold.

I take chocolate chips and mix a little in before baking, sometimes I dump a few on top of the batter, and push them in with a spoon. sometimes I just put them on the top of the hot brownies, and spread them with a spoon. . I make my Mom's chocolate mocha frosting and frost them. All it is is powdered sugar, cocoa, margarine, and hot coffee as the liquid. I don't measure, just use about half a sack of powdered sugar, 1/2 a stick of margarine, cocoa powder to taste, it takes at least a couple heaping tablespoons, and just enough coffee to make it all creamy. Stir with a spoon, and it is wise to sift the powdered sugar before using so you don't have to stir and stir to get any potential lumps out. People don't know that the frosting is mocha, it just makes it taste rich. I hated coffee as a kid, I would not have touched the frosting if it tasted strongly of coffee.

    Make It

    MIX Neufchatel cheese, sugar, flour and remaining egg white until well blended. Spoon over brownie batter. Cut through batter with knife several times for marble effect.

    Bake for about 20-25 minutes.

    3 tbsp butter, melted

    1 cup icing sugar


    2 tbsp boiling water


    Combine all ingredients. Ice brownies while still warm.

    Directions:


    PREHEAT oven to 350潞 F. Grease a 13 x 9-inch baking pan.





    MELT 1 cup chunks and butter in a large, heavy-duty saucepan over low heat, stirring constantly, until smooth. Remove from heat; stir in eggs. Add flour, sugar, vanilla extract and baking soda; stir well.





    SPREAD batter into prepared baking pan; sprinkle with remaining chunks and nuts.





    BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out slightly sticky.





    MICROWAVE caramels and milk in a small, microwave-safe bowl on HIGH (100%) power for 1 minute; stir. Microwave at additional 10 to 20-second intervals; stir until smooth. Drizzle over warm brownies. Cool in pan on wire rack. Cut into bars.

    14 ounces caramels


    1/2 cup evaporated milk


    1 (18.25 ounce) package German chocolate cake mix


    1/3 cup evaporated milk


    3/4 cup butter, melted


    1/4 cup chopped pecans


    2 cups milk chocolate chips


    Cooking Instructions


    Peel caramels and place in a microwave-safe bowl. Stir in 1/2 cup evaporated milk. Heat and stir until all caramels are melted.


    Preheat oven to 350 degrees F (175 degrees C) Grease a 9x13 inch pan.


    In a large mixing bowl, mix together cake mix, 1/3 cup evaporated milk, melted butter, and chopped pecans. Place 1/2 of the batter in prepared baking pan.


    Bake for 8 minutes.


    Place the remaining batter into the fridge. Remove brownies from oven and sprinkle chocolate chips on top. Drizzle caramel sauce over chocolate chips. Remove brownie mix from refrigerator. Using a teaspoon, make small balls with the batter and smash flat. Very carefully, place on top of the Carmel sauce until the top is completely covered.


    Bake for an additional 20 minutes. Remove and let cool.

    Add the flour and mix until just moist. Fold in the nuts with a spatula and pour into the prepared pan. Place in the oven and bake for 40 minutes. Let cool for 1 hour. To serve, drizzle the top with the sauce.





    Sauce: In a double boiler, gently melt the white chocolate. Add the cream and butter and cook briefly until smooth. Let cool a little. Either spoon over brownies, or use a squeeze bottle to sauce the brownies.

    1 cup butter (2 sticks, 8 ounces)


    2 1/4 cups sugar


    1 1/4 cups cocoa powder

    1 teaspoon baking powder

    4 large eggs


    1 1/2 cups all purpose flour (unbleached is best)


    1 cup chopped walnuts or pecans





    Preheat oven to 350^ F. Lightly grease a 9x13 pan.


    In a medium sized microwaveable bowl, or in a medium saucepan over low heat, melt the butter, then add the sugar to combine. Return the mixture to the heat (or microwave) briefly, just until it is hot (110^F to 120^F), but not bubbling; it will become shiny as you stir it. Heating this mixture a second time will dissolve more of the sugar, which will make a shiny top crust on the brownies.





    Stir in the cocoa, salt, baking powder and vanilla. Whisk in the eggs, stirring until smooth, then add the flour and nuts, again stirring until smooth. Spoon the batter into the prepared pan.





    Bake for 28-30 minutes, until a paring knife or skewer inserted in the center comes out clean. The brownies should feel set on the edges and in the center/ Remove them from the oven and cool on a rack before cutting and serving.

    4 oz. walnuts





    In heavy saucepan, combine caramels and 1/2 cup evaporated milk. Stir occasionally over low heat until melted.


    With electric mixer beat together cake mix, butter, and remaining 1/3 cup evaporated milk until dough is well mixed, about 1 minute.





    Press 1/2 of cake mixture into a greased 9 x 13 inch pan and bake at 350 degrees for 10 minutes. Remove from oven and pour melted caramel mixture over top and spread evenly. Sprinkle chocolate chips and nuts over top of caramels.

    I'm thinking of trying a new autumn brownie recipe. I made it up myself. Here's what would be in it: Brownie Mix (of course!) Cinnamon/Nutmeg?, Pumpkin Spice, Pecans and Candy Corn.     You could try making the brownies from scratch... I think it's easier to tweak something you have complete control over, as opposed to something you have minimal control over (like a boxed mix).





    I think you could probably use just pumpkin pie spice... since it contains cinnamon, nutmeg and allspice. I think extra cinnamon and nutmeg might be overkill.





    If you didn't want to mess with the brownies, I would add just the pecans to the brownies and then make a cinnamon (or pumpkin pie spice) flavored whipped cream (you could use cool whip too... just add a little bit of cinnamon and mix until it tastes right to you. I bet the french vanilla cool whip would be awesome with cinnamon.) and then use the candy corn as a garnish. I have no idea what a candy corn might do in the oven, so I wouldn't try mixing it in.Would this be a good brownie recipe?
    sounds better as a cookie. I dont think brownies sound good with candy corn and nutmeg.. but thats just my own tastes! cookies probably would be better.
    I don't know if chocolate and pumpkin taste that good together to me. Maybe you can make ';Blondies'; and do all the pumpkin spice stuff to it. After it's done baking %26amp; out of the oven, press the candy corn into the brownies/blondies. Sounds like yummy stuff!





    Another thing...if you ever see those caramel wraps for apples (they are flat disks of caramel)....you can pour half the batter in the pan, lay a couple of disks in the center of the brownie batter, then spread the rest of the batter on top. It will give the brownies a chewy caramel center! It's best when still warm %26amp; gooey. YUM! Nice with the pumpkin spice stuff too.
    I would leave out the candy corn.


    And maybe mix up the pumpkin mix separately and swirl it in so it looks marbled?

    1 8oz package cream cheese, softened


    1/4 cup pumpkin pur茅e


    1/4 cup butter, softened


    1 tablespoon fresh orange juice


    1 teaspoon grated orange zest - optional


    1/2 teaspoon pure vanilla extract


    4 cups confectioners' sugar - start with 2 cups and taste after mixing, you may want this frosting less sweet since you are putting it on chocolate.

    14 ounces caramels


    1/2 cup evaporated milk


    1 (18.25 ounce) package German chocolate cake mix


    1/3 cup evaporated milk


    3/4 cup butter, melted


    1/4 cup chopped pecans


    2 cups milk chocolate chips


    Cooking Instructions


    Peel caramels and place in a microwave-safe bowl. Stir in 1/2 cup evaporated milk. Heat and stir until all caramels are melted.

I make my Mom's chocolate mocha frosting and frost them. All it is is powdered sugar, cocoa, margarine, and hot coffee as the liquid. I don't measure, just use about half a sack of powdered sugar, 1/2 a stick of margarine, cocoa powder to taste, it takes at least a couple heaping tablespoons, and just enough coffee to make it all creamy. Stir with a spoon, and it is wise to sift the powdered sugar before using so you don't have to stir and stir to get any potential lumps out. People don't know that the frosting is mocha, it just makes it taste rich. I hated coffee as a kid, I would not have touched the frosting if it tasted strongly of coffee.

    Pour into 13x9-inch baking pan sprayed with cooking spray.


    MIX Neufchatel cheese, sugar, flour and remaining egg white until well blended. Spoon over brownie batter. Cut through batter with knife several times for marble effect.


    BAKE 28 to 30 min. or until wooden toothpick inserted in center comes out with fudgy crumbs attached. Cool in pan on wire rack.
    This is the most perfect brownie recipe if you like your brownies delicious, rich, but not too sweet, and moist (the way brownies should be, right?)








    Chocolate Brownies





    1 cup unsalted butter


    1 cup cocoa


    2 cups sugar


    4 large eggs


    1 cup flour


    1 cup chopped walnuts


    1 tsp vanilla essence


    1/4 tsp salt





    Preheat oven to 180掳C (350掳F).


    Melt butter in double boiler, stir in cocoa. Remove from heat, then stir in sugar.


    Break eggs into mixture one at a time, then add flour and stir to combine.


    Add walnuts, vanilla and salt and stir to combine all ingredients.


    Pour into greased and lightly floured 18cm x 28cm baking tray.


    Bake for about 20-25 minutes.





    Do not overcook.





    Makes: about 18 brownies.





    Frosting:


    3 tbsp butter, melted


    1/4 cup cocoa


    1 cup icing sugar


    2 tbsp boiling water


    Combine all ingredients. Ice brownies while still warm.








    SO GOOD.





    I guarantee you they will be good.

    1/4 cup coffee liqueur


    1 1/2 cups semisweet chocolate chips (about 9 ounces)

    Preparation


    Preheat oven to 350掳F. Butter 9x9x2-inch metal baking pan. Place brownie mix in bowl. Add oil, eggs and liqueur; whisk until blended. Stir in chocolate chips and nuts. Within the last 10 years or so, I've taken to cutting big chunks of dark chocolate from a Trader Joe's Pound Plus bar and just mixing them right in when I add flour and nuts at the end.     1 c. butter


    1 (12 oz.) pkg. semi-sweet chocolate chips


    1 1/3 c. sugar


    2 tsp. vanilla


    4 eggs


    1 c. flour


    1 c. pecans, chopped


    Hershey Kisses





    Preheat oven to 350 degrees. Line 48 tassie pans with cups with foil liners. Melt butter in microwave or on top of stove. Add chocolate chips and stir until melted. Remove from heat. Stir in sugar and vanilla until blended. Add eggs, one at a time, stirring briskly after each addition until incorporated. Gradually stir in flour until blended. Add nuts.


    Fill cups 2/3 to 3/4 inch full. Bake 22-25 minutes. Do not overbake, centers should be moist. Place Hershey Kiss on top of each brownie as soon as it is removed from oven. Remove from pans and cool on racks.
    Add them to the batter. Place them in a bowl with 1 teaspoon of water and 1 tablespoon of flour. The flour helps them from sinking to the bottom and the water helps the flour to adhere to the kisses.

    Cake Mix Brownies





    1 box chocolate cake mix


    3 eggs


    1/4 water


    1/4 cup oil


    1 12 oz bag semi sweet chocolate chips


    1 can sweetened condensed milk.





    In a large bowl, mix the 1st 4 ingredients by hand till blended. Set aside. In a saucepan, or microwave, melt the chocolate chips, add sweetened condensed milk and stir till completely blended. Add to cake mixture, mix by hand till well blended. Pour in 9x13 pan that has been sprayed by cooking spray. Bake at 350 for 40-45 minutes. Let cool, cut into squares.





    You might want to add chips, nuts, or use yellow cake mix, and white chocolate chips to make blondies.
