Are there any good brownie recipes?

My mom is sick ( flu ) and i wanted to make her a nice homebaked treat but i can't find any really good ones. I need some!Are there any good brownie recipes?
The Ultimate Brownie is my absolute favorite brownie. It is tall like a cakey-brownie, but is dense like a fudgy-brownie. I'm sure it will be one of your favorite brownie recipes too :)








Ingredients:


8- 1 ounce squares of unsweetened chocolate


1 cup butter


5 eggs


3 cups sugar


1 tablespoon vanilla


1-1/2 cups flour


1 teaspoon salt


2-1/2 cups chopped pecans or walnuts, toasted





Preparation:


Preheat oven to 375 degrees F. Grease a 9 x 13 pan.


Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed. Stir in the nuts. Pour into prepared pan.





Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.





** It's not required, but I use a mixer rather than do it by hand.

This is one of my favourites because it is in the microwave - takes only 5 minutes to cook! WHat can be better than that?!





5 Minute Microwave Brownies





100gms butter (melted)


Add


1 cup sugar


1 tsp vanilla


2 eggs


Beat well with a fork





Add


¾ cup flour


½ cup cocoa


1tsp baking powder


Mix well





Pour into microwave dish and cover


Cook on high for 5 minutes


Remove cake immediately on to rack


Sprinkle with icing sugar

Moist Brownies:





The brownies:


1 1/2 cups all purpose flour


1/2 teaspoon bakin soda


1/4 teaspoon salt


1 Cup white sugar


1 stick of butter


2 Tablespoons water (not warm water or hot water)


9 ounces Semi Sweet chocolate chips, divided


1 teaspoon vanilla


2 eggs





Frosting*:


1 container (16 ounces) vanilla frosting


1 tube ( 4 1/ ounces) chocolate decorating icing





For the brownies- combine flour, baking soda, and salt in a small bowl. Combine sugar, butter and water in a medium sauce pan. bring just to a boil, over medium heat, constantly stirring; remove from heat (or combine sugar, butter and water in a medium microwave safe bowl, at 100% power for 3 mi nutes, stirring haf way trhough cookin time. Stir until smooth). Add 1 cup chocolate chips and vanilla; stir until smooth. add the eggs, 1 at a time, strring after each addition. Stir in the flour mixture adn remaining chocolate chips. Spread into a greased 9 inch square baking pan. Bake in a preheated 350 degrees f oven for 20 to 30 minutes, or until the middel is set. Completely cool (the middel will sink) in the pan on a rack.





For the frostin: Spread teh vanilla frosting over the brownies. Squueze the chocolate icing in parallel lines over the frostin. Drag a wooden pick through the chocolate icing to feather. Allow to stand until the frosting is set.Are there any good brownie recipes?
If she's got the flu, she'd probably prefer chicken noodle soup over brownies. But here's a great recipe... it has more chocolate than flour, so you KNOW it's good! LOL








Decadent Brownies





1 pound unsalted butter


1 pound plus 12 ounces semisweet chocolate chips, divided


6 ounces unsweetened chocolate


6 extra-large eggs


1 tablespoon instant coffee powder


2 tablespoons real vanilla extract


2¼ cups sugar


1¼ cups flour, divided- 1 cup for batter, ¼ cup in walnuts


1 tablespoon baking powder


1 teaspoon kosher salt


3 cups diced walnut pieces (pecans ok, too)


¾ cup peanut butter, optional





Preheat oven to 350ยบ F. Grease and flour a 13x18x1½” sheet pan. Melt together the butter, 1 pound chocolate chips, and bitter chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.





Stir together 1 cup of the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts with 1/4 cup flour to coat. Then add to the chocolate batter. Pour into prepared pan.





OPTION: To make Peanut Butter Swirl brownies, use ¾ cup of peanut butter and add in dollops across chocolate batter. Use a knife to swirl PNB through batter.





Bake for about 30 min, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.

If you love brownies and you also love cheesecake, try this easy recipe for super-moist, rich, brownies topped with cheesecake:





Cheesecake Brownies





1) Brownie batter:





1 1/2 cups all-purpose flour


2 cups sugar


10 tablespoons cocoa powder (sift for best results)


1 teaspoon salt


1 cup vegetable or canola oil


4 eggs


2 teaspoons vanilla


-Combine all ingredients and mix well








2) Cheesecake topping:





1 8oz brick of cream cheese (should be at room temperature)


1 egg


1/3 sugar


-Beat the three ingredients with an electric mixer until smooth.








3) Combining the two:


-Pour the brownie batter evenly into a greased 9x9 pan


-Dollup the cheesecake batter on top of the brownie batter


-swirl together using a knife


-Bake at 350 for 30 minutes or until toothpick inserted into centre comes out clean


-Allow to cool before cutting
8 ounces unsalted butter


8 ounces unsweetened chocolate, cut into small pieces


2 1/4 cups sugar


4 large eggs, at room temperature


1 teaspoon pure vanilla extract


1 cup flour


1/2 teaspoon salt


4 ounces chocolate chips


1/3 cup canned unsweetened coconut milk


1 (4.5 ounce) tube store-bought decorating icing








2. Cooking Directions


Preheat the oven to 350 degrees F. Line an 8-inch square baking pan with enough foil to let flaps hang over two sides; grease the foil.


In a double boiler, melt together the butter and unsweetened chocolate, stirring occasionally. Let cool slightly, then beat in the sugar, eggs and vanilla with a wooden spoon until glossy. Stir in the flour and salt. Spread the batter evenly in the prepared pan and bake until the top cracks and a toothpick inserted into the center comes out moist, about 50 minutes. let cool.


Meanwhile, place the chocolate chips in a medium bowl. In a small saucepan, bring the coconut milk to a simmer. Pour the coconut milk over the chocolate chips and let stand for 5 minutes, then whisk until smooth. Pour the warm glaze over the cooled brownies and tilt the pan to coat evenly. Refrigerate until the glaze is set, about 2 hours. Using the foil flaps, gently remove the chilled brownies from the pan and cut into 1-inch squares. Decorate the brownie bites with the icing.
