Bananas are a great replacement for eggs in baking. The only thing you need to ask yourself is if you actually want that banana taste. This taste-factor is especially exploited in banana cakes. Never mind, though, they could always just be banana-chocolate brownies!





BTW I wouldn't use tofu for cooking brownies anyway. It's not as good at binding in brownies. If you don't want a banana taste, you can always use commercially-sold egg replacer (such as Ener-G), or you can make your own ';egg replacer'; using flax-seeds. There's a recipe on one of the links. Applesauce is another good egg replacer.you cant taste it once theyre cooked either.





Id just look for a recipe that uses bananas to start with, http://vegweb.com has loads
As has been said, bananas would be good. I actually like the sound of banana-chocolate brownies. Since bananas are naturally sweet, I would cut some of the sugar content.
