Does anyone have a good brownie recipe they can share?

Everytime I make brownies, the brownies turn out to be more like a cake. I want the kind of brownies that turn out to be chewy. Can anyone help me with this please?Does anyone have a good brownie recipe they can share?
Remove teddy bear from oven and preheat oven to 375.


Melt 1 cup margarine in saucepan.





Remove teddy bear from oven and tell Jr ';no, no.';





Add margarine to 2 cups sugar.





Take shortening can away from Jr. and clean cupboards.





Measure 1/3 cup cocoa.





Take shortening can away from Jr. again and bathe cat.





Apply antiseptic and bandages to scratches sustained while removing shortening from cat's tail.





Assemble 4 eggs, 2 tsp. vanilla, and 1-1/2 cups sifted flour.





Take smoldering teddy bear from oven and open all doors and windows for ventilation.





Take telephone away from Billy and assure party on the line the call was a mistake. Call operator and attempt to have direct dialed call removed from bill.





Measure 1 tsp. salt, 1/2 cup nuts and beat all ingredients well.





Let cat out of refrigerator.





Pour mixture into well-greased 9x13-inch pan.





Bake 25 minutes.





Rescue cat and take razor away from Billy. Explain to kids that you have no idea if shaved cats will sunburn. Throw cat outside while there's still time and he's still able to run away.











FROSTING:





Mix the following in saucepan:





1 cup sugar


1 oz unsweetened chocolate


1/4 cup margarine Take the darn teddy bear out of the @#$% broiler and throw it away -- far away.





Answer the door and meekly explain to nice policeman that you didn't know Jr had slipped out of the house and was heading for the street. Put Jr in playpen.





Add 1/3 cup milk, dash of salt, and boil, stirring constantly for 2 minutes.





Answer door and apologize to neighbor for Billy having stuck a garden hose in man's front door mail slot. Promise to pay for ruined carpet.





Tie Billy to clothesline.

I think that the ';chewy'; factor can be determined by the ratio of sugar to flour. More, or equal amounts, flour than sugar=cake like


more sugar than flour=chewy. At least that has been the case for me.
4 eggs


1 1/2 cups sugar


1/2 cup flour


1/2 cup cocoa powder


1 cup melted butter


2 tsp. vanilla


1/4 tsp. salt


1 cup pecans





In a large bowl, beat the eggs with an electric mixer until lemon colored, or


2 minutes. Add the sugar, flour, cocoa powder and combine well. Add the


melted butter, vanilla, and salt and blend thoroughly. Fold in the pecans.


Pour the mixture into an 8';x8' baking dish. Place the dish into a larger


baking dish and fill half way up with water, surrounding the 8x8 dish. Bake


at 325 degrees for 45 minutes until crust forms on top. Serve warm or chill


overnight. Serve with whipped cream.








2/3 cup butter or margarine


5 ounces unsweetened baking chocolate, cut into pieces


1 3/4 cups sugar


2 teaspoons vanilla


3 eggs


1 cup Gold Medal庐 all-purpose flour


1 cup chopped walnuts


Chocolate Frosting, if desired (See Below)








1. Heat oven to 350潞F. Grease bottom and sides of square pan, 9x9x2 inches.


2. Melt butter and chocolate in 1-quart saucepan over low heat, stirring constantly. Cool slightly.


3. Beat sugar, vanilla and eggs in medium bowl with electric mixer on high speed 5 minutes. Beat in chocolate mixture on low speed. Beat in flour just until blended. Stir in walnuts. Spread in pan.


4. Bake 40 to 45 minutes or just until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Spread with Chocolate Frosting. Cut into 4 rows by 4 rows.
Brownies


1/2 cup margarine


4 cups sugar


4 beaten eggs


mix above 3 ingredients together


add 1 can Hershey's Chocolate Syrup


and 1 cup plus 1 heaping Tbsp. flour, combine all ingredients. bake at 350 degrees for 25 min. Fills a big cookie sheet.





Another helpful tip is to check on the brownies about 5 minutes before they are done, make sure they do not get over baked, that will dry them out. my secret for chocolate chip cookies that fall apart chewy and soft is to underbake them.

1/2 cup butter


4 ounces unsweetened chocolate, chopped

Equipment: Mini-muffin tin or regular








Preheat oven to 350 degrees F.


Over hot water in a small bowl, melt the butter and chocolate together. Let cool to almost room temperature while you prepare the rest of the recipe.





In a mixer or with a whisk, whip the eggs with the sugar until fluffy. Stir in the vanilla and salt with a wooden spoon. Add the melted chocolate mixture and stir. Add the flour and stir in only until incorporated. Add nuts and mix briefly.





Grease a non-stick mini muffin (or regular) tin and divide the batter evenly by spoonfuls filling each 3/4 full. Top each with a mini marshmallow, pressing it in slightly. Bake for 20 minutes for chewy brownies and 25 minutes for cake-ier brownie bites. Let cool then ease them out of the pan.

Yields sixteen 2-inch squares





Added flour helps to give these brownies their chewiness. It's important not to overbake these or they'll dry out.

8 tablespoons (4 oz.) unsalted butter; more for the pan


4 oz. unsweetened chocolate


1 1/2 cups sugar


1/4 teaspoon salt


2 teaspoons vanilla extract


2 large eggs, at room temperature


1 cup flour


2 tablespoons natural cocoa (not Dutch-processed)





RECIPE METHOD


Position an oven rack on the middle rung. Heat the oven to 350 degrees F. Butter an 8-inch square pan, line the pan bottom with parchment (or waxed paper), and then butter the parchment.





In a double boiler over simmering water, melt the butter and chocolate. Remove the pan from the heat; cool slightly. Stir in the sugar, salt, and vanilla. Mix in the eggs, one at a time, stirring each time until blended. Add the flour and cocoa; beat until incorporated and the mixture is smooth, 30 to 60 seconds.

Chocolate Brownies with Topping





Ingredients


200g butter


160g dark cooking chocolate


200g castor sugar


A pinch of salt


3 eggs


Two drops of peppermint flavoured essence


陆 tsp vanilla essence





Sifted twice:


13g cocoa powder


125g plain flour


100g roasted chopped almonds





Ganache:


150g dark chocolate, chopped


100ml whipping cream





Method


Line a 27cmx18cm lamington tin with greased baking paper. Preheat oven to 180掳C.





Melt butter and dark cooking chocolate in a bowl over simmering water. Remove and put aside to cool.





Beat eggs, sugar, salt and essence until light. Add in melted chocolate and mix well.





Fold in sifted flour and cocoa mixture to combine. Stir in chopped almonds with a spatula.





Pour mixture into prepared pan and bake for 30鈥?0 minutes. When done, allow brownies to cool for 10鈥?5 minutes. Turn out onto a wire rack, then pour topping over brownies and refrigerate until set.





To prepare topping, melt cream in a bowl over simmering water then add in chocolate.





Stir until chocolate has melted. Remove from heat and leave to cool slightly.








Chocolate Cream Cheese Brownie





Ingredients


150g butter


190g castor sugar


3 eggs


1 tsp vanilla essence


Rind and juice of one orange


4 tbsp UHT milk





Sift:


225g plain flour


1 tsp baking powder


1/2 tsp bicarbonate of soda


1/2 tsp salt


20g cocoa powder


150g cream cheese


1 tbsp castor sugar


1/2 tsp vanilla essence


50g roasted hazelnuts, coarsely chopped





Method


Grease, line and grease an 18-19cm square baking tray. Preheat oven to 170掳C.





Cream butter, sugar and vanilla essence until light and creamy.





Add eggs one at a time, beating well after each addition.





Add orange rind and stir in orange juice and milk, gradually alternating it with the sifted cocoa and flour mixture. Pour batter into prepared tray.





Beat cream cheese, sugar and essence until creamy. Spoon cream cheese mixture over the cocoa mixture and use a satay stick to create a marble pattern on the surface of the brownie.





Bake brownie in preheated oven for 30-40 minutes.








Triple Chocolate Brownies





Ingredients


125g unsalted butter


200g quality semi-sweet chocolate (Hershey鈥檚)


60g plain flour


1/4 tsp baking soda (sodium bicarbonate)


40g unsweetened cocoa (Hershey鈥檚)


1/8 tsp salt


200g sugar


4 large eggs, room temperature


1 1/2 tsp vanilla extract


50-100g coarsely chopped walnuts


60g premium white chocolate (Baker鈥檚 preferred), melted





Method


Preheat oven to 180掳C. Grease an oblong baking pan and line with non-stick baking paper.





Combine the butter and chocolate in a microwave-safe bowl or measuring jug. Microwave on high for a minute and stir; if the chocolate does not melt completely after stirring, microwave on high for 30 seconds to one minute longer, stirring after each 30 seconds.





On the stove, melt butter in a heavy saucepan or frying pan, add the chocolate and stir constantly until melted and smooth.





Sift together the flour, baking soda and cocoa. Add the salt and whisk the dry ingredients together for 30 seconds. Beat together the sugar, eggs and vanilla. If using an electric mixer, set at medium speed.





Stir in the flour-cocoa mixture and the melted chocolate, using a rubber spatula. Stir until the batter is combined and the last traces of flour have disappeared. Stir in the nuts gently (be sure they are fresh).





Pour into the prepared pan. Bake for 20-25 minutes; the mixture should look set and the top glossy when done. If using a convection or fan-forced oven, cooking time may be shorter.





Test with a toothpick or satay stick to see if they are properly cooked. The stick should come out with moist crumbs sticking to it. If the stick comes out clean, the brownies will be a bit dry. Cool the pan on a wire rack.





When completely cool, frost the brownies with chocolate frosting. When frosting has set, drizzle with melted white chocolate. Cut into squares or rectangles. Remove brownies from the pan carefully to avoid breaking them
