CARIBBEAN FUDGY BROWNIES





1/2 cup butter


3 ounces unsweetened baking chocolate


1 1/4 cups sugar


1 teaspoon vanilla


1 teaspoon spicy or dark rum


1/8 teaspoon Jamaican allspice (optional)


2 eggs


1 cup flour


1/2 teaspoon baking powder


1/4 teaspoon salt





Pre-heat oven to 350掳F.


Grease 8 inch square baking pan, greasing only the bottom and leaving the sides ungreased.





In a medium saucepan, stir together chocolate and butter over low heat setting until smooth, about 5 minutes. Remove from heat. Stir in sugar.





Whisk in eggs, one at a time, stirring well after each addition. Stir in flour, baking powder and salt, vanilla and rum; stir only until mixture is smooth and all ingredients are combined.





Spread mixture into baking pan.





Bake for 25 to 35 minutes or until brownies just begin to pull away from sides of pan. Watch carefully near later stage of cooking period to prevent overbaking or brownies may become dry. If your brownies consistently are dry or overbaked, try reducing oven temperature by 25 degrees.





Allow to cool before slicing into squares.





Note: To make a double batch, double all ingredients and use a 13x9 inch baking pan. Bake 35 to 40 minutes.





VARIATIONS: Add one of the following - 3/4 cup walnuts, pecans, macadamia nuts, raisins, chocolate or peanut butter chips, or sprinkle chocolate chips over top just before baking.





If you like your brownies a little lighter, add 1/4 teaspoon baking soda and a teaspoon of molasses.Home-Made Brownie Recipes?

Ingredients:


1/2c butter


1c. white sugar


2 eggs


1tsp vanilla extract


2/3c unsweetened cocoa powder


1/2 c. all purpose flour


1/4tsp salt


1/2tsp baking powder





Preheat oven to 350F and lightly grease a 8x8 inch pan and flour it lightly (just put 1/4c of flour in there, seal it with a wrap, shake it to coat every side)





In a pan, melt the butter and with the heat still on, stir the sugar in. Take it off the heat and mix eggs and vanilla extract in there. Add cocoa, flour, salt, and baking powder. Mix well.





Pour into the pan and bake for 25-30min.





Take it out, let it sit for 5min, cut up into pieces with spatula, take them out and let them cool.





If you want, you can make frosting for it:


4tbsp cocoa powder


2tsp honey


1tsp milk


4tbsp butter


1tsp vanilla extract


1c confectioner's sugar


1/4c white sugar





Boil about 2in of water in a pot, put in a heatproof metal bowl in there to heat it up. Melt the butter in there, mix white sugar, confectioners sugar, and powder. Add milk, extract and honey. Stir until everything has melted and smoothed out.





You can make this about 5-10min before your brownies come out so your brownies and frosting will be both warm and good!
That kind of depends on whether you like your brownies dense and chewy or light and cakey, but the following recipe is fast and easy, and most people like them.





Quick and Easy Brownies





2 cups white sugar


1 cup butter


1/2 cup cocoa powder


1 teaspoon vanilla extract


4 eggs


1 1/2 cups all-purpose flour


1/2 teaspoon baking powder


1/2 teaspoon salt


1/2 cup walnut halves (I leave these out)





Melt the butter or margarine and mix all ingredients in the order given.





Bake at 350 degrees F for 20 to 30 minutes in a 9 x 13 inch greased pan.
